    Cream Cheese Frosting

    Ingredients:
    4 ounces unsalted butter, softened
    4 ounces cream cheese, softened
    2 cups powdered sugar
    1 teaspoon vanilla extract
    Directions:
    Beat together the butter and cream cheese in KitchenAid® Stand Mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.

    Smashed Sweet Potatoes

    Ingredients:
    4 pounds sweet potatoes (about 6 large)
    1/2 cup orange juice
    1/2 cup heavy cream
    4 tablespoons (1/2 stick) unsalted butter, melted
    1/4 cup light brown sugar
    1 teaspoon ground nutmeg
    1/2 teaspoon ground cinnamon
    2 teaspoons kosher salt
    1 teaspoon freshly ground black pepper
    Directions:
    Preheat the oven to 375 degrees F.Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. Remove from the oven and scoop out the insides as soon as they are cool enough to handle. Place the sweet potato meat into the bowl of KitchenAid® Stand Mixerr fitted with a paddle attachment and add the orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined but not smooth and transfer to a baking dish.Bake the potatoes for 20 to 30 minutes, until heated through.

    Guacamole

    Ingredients:
    3 avocados (chopped)
    Juice of 1 lime
    2 Roma tomatoes (chopped)
    1/2 cup diced onions
    1 handful fresh cilantro (chopped)
    1 garlic clove
    1 teaspoon of salt
    1 pinch cayenne pepper (optional)
    Directions:
    Mix avocado, lime juice, and salt on medium speed in KitchenAid® Stand Mixer until pureed (flat beater attachment recommended). Use a spatula to clean the sides, then blend again on high speed for about one minute. Add the garlic and onions and mix until blended. Then add your remaining ingredients and mix on low until blended.

    Pizza Dough (No Yeast)

    Ingredients:
    2 1/2 cups all purpose flour
    1 tbsp baking powder
    1/4 teaspoon of salt
    1 cup milk
    1/4 cup butter (room temperature)
    Directions:
    Preheat oven to 450 degrees. Line baking sheet with parchment paper, or prepare pizza pan to your preference or instructions. In KitchenAid® Stand Mixer, combine all ingredients, using dough hook mix on low speed until one ball of dough forms. Sprinkle flour onto a rolling pin and your hands, remove the ball of dough from the mixing bowl and pat down with flour to help form into a solid ball. Dough may be slightly sticky straight from the mixer. Roll the dough into a ball and set onto the prepared baking sheet. Using the rolling pin coated with flour roll out the dough to desired thickness. Top with desired toppings and bake for 10-12 minutes. Remove from oven, allow time to cool and enjoy!

    Pancakes

    Ingredients:
    1 1/2 cups all purpose flour
    2 teaspoons baking powder
    1 teaspoon sugar
    1/2 teaspoon salt
    2 eggs
    1 1/4 cups milk
    3 tbsp shortening, melted
    Directions:
    Combine flour, baking powder, sugar and salt in KitchenAid® Stand Mixer bowl. Add remaining ingredients. Attach flat beater to mixer. Turn to Speed 4 and mix until ingredients are combined, about 30 seconds. Stop and scrape bowl. Turn to Speed 4 and mix until smooth, about 15 seconds.Spray griddle or heavy skillet with no-stick cooking spray. Heat griddle to medium-high heat. Pour about 1/3 cup batter for each pancake onto griddle. Cook 1 to 2 minutes, or until bubbles form on surface and edges become dry. Turn and cook 1 to 2 minutes longer, or until golden brown on underside.
