I love pickles.  I love dill pickle anything.  One of my favorite indulgences is the dill pickle sunflower seeds.  Oh, and fried pickles.  I could eat my weight in fried pickles.  They are glorious!   However, I'm not a huge fan of fried foods so I needed an alternative to the delicious fried goodness of pickles.  So I found a healthier alternative which honestly are actually tastier than the fried version.  So here's my favorite recipes for baked "fried" pickles.

Baked "Fried" Pickles

Ingredients:

1 small jar of dill pickle chips/slices (I try to get the thick cut slices)
1 C Flour
1/2 C breadcrumbs
1/4 C Panko breadcrumbs
1/2 C - 1 C shredded cheese
2 eggs
2 T Milk
various spices

Directions:

Preheat the oven to 425 degrees

In one dish/bowl put the flour in one bowl/dish with your favorite spices (I use garlic powder, onion powder and a bit of white pepper.  You can even add some chili powder for an extra kick).

In the next bowl mix your eggs with the milk,

And finally in the last bowl/dish mix your bread crumbs and cheese

Dredge your pickles in the flour, then dip them in the egg mixture, then cover them in the breadcrumbs.

Place each pickle on a greased cookie sheet.

Put in the over and cook 7-10 minutes

Let cool for a bit and enjoy!

I love dipping these in ranch dressing but they are just as great by themselves.
