So I find myself over cooking all the time.  I have a lot of leftovers most of the time, and to be honest they get put in the fridge and they ruin.  It is wasteful and I tell myself each time I put leftovers in the fridge they will get eaten and they don't.  I realized I have to get creative.

On Monday I decided to throw a roast in the Crock pot.  I wanted dinner to be taken care of when I got home and for E. to have a great meal after his first day of school.  It was amazing (however I forgot to put the potatoes in the Crock pot with the rest of the stuff, so I had to cook them).preparing Crock Pot Pork Roast with Apples & Sweet Potatoes from Amy's Cooking Adventures

Well we had an awesome meal, but then it hit me, we are going to have a ton of leftover roast that I refuse to let go bad or just give up and feed it to the dogs.

So what to do, what to do?

I thought I'll stop by the store and pick up tortillas on the way home from work.  Yeah, completely forgot and once I got home, I didn't want to get back out.  So onto Plan B.

So I am searching around my kitchen trying to find a way to fix the roast with out having the same thing as the night before.

HMM.  I spotted my packet of King Hawaiian Rolls.  I knew I had cheese.  We had some leftover mashed potatoes, so here it was, the idea.

I warmed up the rolls, potatoes and the roast.  I cut the rolls open, added a little light mayo to the top of the rolls, a spoon of potatoes, a small slice of cheese and some roast.  Voila!  Roast sliders. I paired it with some apple slices and it was a complete meal that wasn't the same as the night before.

E. loved them and he kept asking for more.

So I will add that to my repitoire of ideas when it comes to using leftover roast.

Of course, I will still remember the burritos, I just have to remember to make sure I have tortillas.

Another idea for leftover roast and this would take some time is to make, homemade roast and cheese chile rellenos.  That made me hungry just typing it.  Too bad I don't have enough roast leftovers to make that tonight.
