Kenny’s Recipe Of The Week
Are you a fan of soup? Maybe Broccoli and Cheese Soup? Then read on!Here's my recipe for Broccoli and Cheese Soup:
- 6 Cups chicken broth
- 1 stick of butter
- Half pint of Half 'n Half
- 1 onion
- 1/2 cup of Flour
- 1 Pound of Velveeta Cheese
- 1 Bag of Chopped Broccoli (I use the frozen kind)
In a pot, saute' the chopped onions in the melted butter. Add the flour and stir until blended. Add the chicken broth and Half 'n Half and stir until the flour/butter mixture is dissolved. (You have to be careful. The flour will stick to the bottom of the pan if you don't keep stirring it.) Bring to a light boil. Cube the Velveeta cheese and add to the soup. Add the broccoli. Stir until the cheese is melted and the broccoli is cooked. (It won't take that long).
Voila! You have a quick and easy Broccoli and Cheese Soup! And it's not that bad for you either.
