I love watermelon!  It is my favorite fruit.  One of the best parts of summer is watermelon.  So I was thinking that maybe I would share some great ideas for watermelon.

When we took our trip to the Gaylord Texan, they had watermelon water on their breakfast buffet.  All I have to say is I was in heaven and drank about 4 glasses of the delicious watermelon goodness.

So when I got home I kept wanting it so I dived in and figured out how to make it.

Watermelon Water

 

Ingredients:

6 c watermelon cut into pieces.

2 - 4 cups of drinking water

1 T Honey or 2 T Sugar

Lime Juice

Directions:

Place watermelon in blender and cover with water and process until smooth (you may have to do several batches).

Mix in honey or sugar

Add a squeeze of lime juice.

Serve as is or over ice

Watermelon Fire and Ice Salsa

Ingredients:

3 c  Chopped watermelon
1/2 c  Green bell peppers, chopped
2 tb Lime juice
1 tb Chopped cilantro
1 tb Chopped green onion
1 tb Jalapeno peppers, chopped*
1/2 ts Garlic salt

* Use up to 2 TBS. chopped jalapenos, depending on taste.

Combine all ingredients.  Cover and refrigerate 1 hour. Serve on
sliced oranges or cheese-filled manicotti. Or, top 1 cup sour cream
with 1 cup salsa and serve with chips. PER SERVING: 1/2 cup =
calories ~ 31, protein - 1 g., fat - .4 g., carbohydrates - 7 g.,
cholesterol - 0, sodium - 156 mg. FROM:  Light & Easy Meals from

NOTE:  lower sodium figure
by using garlic powder in place of garlic salt and adding lite salt
to taste.

Watermelon Muffins

Ingredients:

1-1/2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 pinch salt
1/8 teaspoon cinnamon
6 Tablespoons butter
2/3 cup sugar
2 eggs
1/2 cup milk
1/2 cup watermelon juice
1/2 cup watermelon pulp
1/3 cup raisins

Directions

Sift flour, baking powder, baking soda, salt, and cinnamon in large bowl.
Cream butter and sugar; add eggs. Whip in milk, watermelon juice, pulp, and raisins.
Add wet mixture to dry ingredients; blend just to incorporate.
Fill greased muffin cups 2/3 full.
Bake 25 minutes.

Watermelon Margaritas

Ingredients:
2 tsp sugar
1 lime
31/2 c cubed seeded watermelon
1/2 c tequila
2 tbls sugar
3 tbls fresh lime juice
1 tbls triple sec
Orange flavor liqueur
Lime wedge or watermelon balls

Directions

Place 2 tsp sugar in a saucer
Rub the rim of 6 glasses with 1 lime wedge spin rim of each glass in sugar to coat.
Set prepared glasses aside.
Combine watermelon and next 4 ingredients (through triple sec)
In a blender.
Process until smooth.
Fill each prepared glass with 1/2 c crushed ice.
Add 1/2 c margarita to each glass.
Garnish with melon balls if desired.
Yeild 6 servings
