Vegan Lemon Loaf

Yields 12 servings 

Ingredients

For the Lemon Loaf

  • 1 cup almond milk
  • 1 cup sugar
  • sub 4 tsp stevia + 1/4 cup sugar for a lower calorie option!
  • ½ cup lemon juice
  • ¼ cup melted vegan butter
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 2 ¼ cups regular or gluten-free all-purpose flour

For the Cream Cheese Frosting

  • 1 ½ cups powdered sugar
  • ¼ cup softened vegan butter
  • 4 oz vegan cream cheese

Instructions

  1. Preheat oven to 375
  2. Mix almond milk, sugar, lemon juice, melted vegan butter, and vanilla. Add the baking powder and baking soda and mix. Quickly add the flour and mix until combined. Don't over mix!
  3. Pour the batter into a greased 9x5 loaf pan (I prefer metal) and bake for 45 minutes.
  4. While the loaf is baking, use an electric hand mixer to mix the vegan cream cheese icing ingredients and spread over the warm loaf. If going “low calorie”, use half the icing and save the rest for later!
