After you have had a day of gluttony, with stuffing yourself with great Thanksgiving Delights.  You are not going to want to put another bite of turkey in your mouth, yet you have a plethora of the bird leftover.  Well let me share my favorite leftover turkey recipe with you.

I love Mexican food and I love enchiladas so I transformed my delicious Chicken Enchilada Recipe into the best left over Turkey Enchilada Recipe.

Sour Cream Turkey Enchiladas

INGREDIENTS:

1 lb turkey, shredded

1 medium onion, chopped

1 tablespoon vegetable oil

1 package 8-inch flour tortillas, softened

2 cups grated monterey jack cheese or 2 cups Mexican blend cheese, divided

1/4 cup butter

1/4 cup flour

2 cans green enchilada sauce

1 pint sour cream

1 (4 ounce) can chopped green chilies

DIRECTIONS:

In sauce pan, cook onion in oil until clear, add the turkey and one can enchilada sauce. Let the turkey simmer in the sauce until thoroughly heated.

Divide turkey evenly between the tortillas; add 1 1/2 tablespoons cheese to each tortilla.

Roll enchiladas and place seam-side down in 9×13″ baking dish that has been lightly sprayed with non-stick cooking spray.

Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in the other can of enchilada sauce then bring to boiling, stirring frequently.  It will turn into a gravy

Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas.

Top with remaining 3/4 cup cheese and bake at 400° for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.
