Every day is a “National Day” of something.  Once in a while, that something turns out to be great.  In today’s case, it is National Vanilla Cupcake Day.  According to researchers, cupcakes came along in 1796.  A recipe for small cakes cooked in heavy pottery cups was featured in American Cookery by Amelia Simmons.  The first documented use of the word cupcake wouldn’t happen for another 32 years.  That happened in 1828 in a cookbook for pastries, cakes, and sweetmeats.
