Green Chile Chicken Stew is the perfect meal for a cold wintry day.  Plus, if you cook it in your crockpot it will be ready for you when you get home from that long day of work.

What you'll need:

  • A crock pot
  • 1 can of green enchilada sauce (buy it the spice you want it, mild, hot, extra hot)
  • 3  chicken breasts (I use frozen and they cook up just fine with no defrosting)
  • 1 small tub of chopped green chiles (find them in the freezer section at the store, I throw them in frozen and again they cook up nice)
  • 1 box chicken broth
  • 3-4 potatoes peeled and diced
  • 1-2 avocados
  • Tortillas

Directions:

Pour the can of enchilada sauce into the crock pot, followed by the chicken breasts, potatoes.  Then fill with chicken broth to cover.  Turn your crock pot to low and let this deliciousness cook all day.

Top each bowl with a couple of slices of avocado and serve with warm tortillas.

I even top mine with a dollop of sour cream.  ( are you singing the Daisy theme song now?)
