So I got off work yesterday and proceeded to make my way to Walmart for some grocery shopping.  Well grocery shopping takes at least and hour, and who wants to cook dinner after shopping and then putting the groceries away.  Well luckily I found a recipe that was super quick and super easy to make.

Easy Peasy Pot Pies

Ingredients

1 cup of half and half (i grabbed the fat free for less calories)

1 cup of chicken broth (again I chose fat free)

Two Cooked Chicken breasts cut up into small pieces

1/2 t Poultry Seasoning (I use less because I don't like a lot)

1 can of biscuits ( I picked up the less fat kind in Grands. All I could find was the 8 count you probably want to use the 5 count)

3T of flour

Small bag of mixed veggies (if you don't like green beans or corn you might just get peas and carrots)

Instructions

Preheat oven to 425 degrees

In a sauce pan add the flour and the cream and the broth, mix with a whisk (its easier than a spoon), until boiling, sauce will thicken.  Then turn the heat down to a simmer and add the chicken and vegetables and stir until warm.

Take 5 (4-5oz) ramekins and fill to the top, then place them in the over for 12 minutes (I had to cook them less because my over got the tops way to brown).

Remove from the oven and serve.  Yummy Yum Yum!
