How To Make Easter Basket Cookies – Step By Step Instructions [PHOTOS]
Looking for a cute treat for Easter to make for the kids or the family? Try this, Easter Basket Cookies.
What you'll need:
Roll of pre-made sugar cookies (brand doesn't matter)
Container of vanilla frosting
1/2 cup of sweetened coconut
colored sugar
red licorice, sour straws or pipe cleaners
bag of jelly beans
jordan almonds
mini-muffin pan
Directions:
Pre-heat oven to 350
Take a cookie scoop of sugar cookie dough and roll into a ball and repeat until all the dough is gone (or you can do it one at a time)*.
Take the balls and roll them in the colored sugar (I opted for Easter colors)*
Place each sugar rolled ball into the muffin pan
With your thumb press down each cookie ball in the middle.
Bake in the oven for 15-20 minutes depending on how fast or slow your oven cooks.
In the mean time take 1/2c of coconut and put it in a zip lock bag.
Put in 4 or 5 drops of green food coloring and squish the coconut around in the back to color.
Then take the frosting and put it in a decorator bag or a ziploc bag.
Once your cookies are done let them cool and then take your frosting and fill each cookie.
Top each cookie with the green coconut.
Then put your jelly beans and/or Jordan almonds on top.
Then top with your licorice, pipe cleaner, etc.
*some tips
I rolled the cookies way to big and they exploded over the top of the muffin pan. Roll them smaller than you think they should be.
I used the larger granule colored sugar and it melted into the cookie without the color. So I would suggest the smaller granules and darker colored sugar.
I used the Twizzler pull aparts for the basket handles. I had to freeze them to get them to stand up and as soon as they thawed they fell. You might use pipe cleaner.
