There's one thing that Amarillo has a lot of: options. Namely, food options. We can choose to grab fast food. We can choose to sit down in a nice restaurant. Or we can choose to hunt down a new food truck to try.

Over the past few years, food trucks have become a way of life. I am in love with that fact. Just think about the endless options for different foods that we finally have at our fingertips, thanks to the popularity of food trucks here in Amarillo.

So when it comes to food trucks the sky is the limit. You want a food truck that is strictly barbecue? Done. How about one that is strictly breakfast food? Sure. Or what about one that is strictly dessert? Well now that you mention it....

This phenomenal sweet treat of a food truck is run by Amanda and Kolby Gilleland. Originally from Pampa, the couple spent the better part of a decade in the culinary field up in Colorado. In fact, you'll find a healthy heaping of Colorado influences in just about everything they make.

And I am certainly not complaining. I do mean it when I say the waffles are to die for. Amanda and her crew makes these in a way where the ice cream caramelizes the surface as you eat it--it's indescribable bliss.
