I think this has been one of the most anticipated restaurant openings here in Amarillo. We got wind of the fact we were getting a Chuy's in Amarillo. Oh and then Covid hit. So with that, of course, there was a delay. Some of us worried that it might not happen at all.

Good news is that the long wait is over. The official opening day is today. Yes, you read that right. Chuy's is open to the public today. Yay. Some people got to participate in their soft opening. A way for the staff to get to practice before the craziness of opening day.

Charlie, his wife, Makayla, and I all had plans to try it out last night. I have never been to a Chuy's. My daughter said she really loved the food there. I was able to convince her to stay in Amarillo a little longer so she could go with me. Yes, it meant she had to get up really early this morning to get home and to work by noon. I think it was worth it.

Chuy's is located at 8400 I40. I think it may be the old Johnny Carino's location.

We got there and was seated on the enclosed patio. I really liked the ambience. The sound was at a great level where we could still have a conversation. We had several. I really loved there salsa. It had a lime tang taste to it. Things were looking good.

I ordered the Cueychanga.

My daughter ordered the steak burrito. We both substituted the Boom Boom sauce which had a kick to it. I also asked for a side of the Hatch Green Chile sauce. That one had an even bigger kick. I really enjoyed them both.

We also got to try the Tres Leches for dessert which was a hit for all of us. I highly recommend giving it a try. I would suggest splitting it at the table because it is huge.

It was a great night trying out a new restaurant here in Amarillo. I know I will be back because there are many more items I just can't wait to try. They are now open for business as of today.
