I will be the first to admit I don't go to Starbucks very often. Heck I work morning radio and I don't drink coffee. I really don't drink much caffeine at all.

That is mainly because my drink of choice is always water or wine. So the only time I get to Starbucks is when my daughter is in town and she wants something from there.

So I had no idea about egg bites. I don't even know if our Starbucks serve them. I only heard about them through my Instant Pot Community page. Oh they looked so good. I didn't have the egg bite mold to make them in.

When Faith and I went to Kohl's the other night they had them for sale in the kitchen area. So yes, I bought one. I then went to Market Street to get the ingredients I would need. I wanted to try my luck with them over the weekend.

Really the only constant ingredients you need are 4 eggs, 1/2 cup of ricotta or cottage cheese (I used cottage) and 1/2 cup of any cheese you want (I bought mozzarella, cheddar and a Mexican blend of cheeses)

Other than that the other ingredients you use are up to you. I bought spinach, mushrooms, bacon, onion, green chili's and jalapenos.

So basically you take the 4 eggs, cottage cheese and whatever kind of other cheese you want in a blender or food processor (luckily my new blender just got delivered). Then you choose your stuff to make the egg bites. I made one batch with spinach, bacon and mushrooms.

The second batch was spinach, onion, bacon and green chili's. You can chop everything up a little bit and then throw in the blender to get it all evenly mixed and chopped.

You then pour your egg mixture in the egg bite mold and place on trivet in the instant pot. Make sure you add one cup of water. Set it on steam mode for 10 minutes. When it is all done you will allow it to set in pot for another 10 minutes.

Remove from pot to let cool a bit and enjoy. You can store in the refrigerator for up to 7 days. To reheat you can place in the microwave for about 45 seconds.

You can also freeze them up to a month. I don't think you will take that long to eat them. They are that good. A serving is 2 egg bites and they come in under 100 calories. So a very filling and healthy breakfast.

Try them and I bet you will love them too. Sorry Starbucks for not knowing about these sooner. I am thrilled that I can make them at home!
