I am very fortunate that my son loves vegetables.  But that isn't always the case with my nieces and nephews.  Well, I have found a snack that they all love and is really good for them too! 

When snack time comes around, my son is all about veggies.  He is a very rare child.  His favorite all time snack is raw bell pepper.  But it looks like that is changing.

Since my son loves vegetables, I try to find all kinds of different recipes and ways to cook vegetables so he won't get tired of them.  Well, I came across a recipe for kale chips.  They came out ok, but I decided to tweak the recipe and now he can't get enough of them.

What's even better, my nephews, who hate vegetables, came over as they were coming out of the oven.  They were a little hesitant at first, but once they tried them, they couldn't get enough!  I call this a win.  The boys get a snack they love, and I am happy that it isn't junk food.

Here's my recipe.  Enjoy!

Ingredients:

1-2 bunches of kale (depending on the amount of people)

Olive Oil

Lemon Salt

Directions:

1. You will need to pre-heat the oven to 350 degrees F.  Then line a cookie sheet with some parchment paper.

2. Carefully remove the kale from the thick stem.  I usually use my hands to tear it away, but you can use a knife or kitchen shears.  Tear it into pieces, but not too small.  Make sure it is washed and thoroughly dried.

3. Place in a large bowl and drizzle with olive oil.  Toss until mostly covered.  Lay the pieces on the baking sheet and try to fit as much as you can without overlapping.  Then, sprinkle generously with the lemon salt.

4. Now bake until the edges are brown but not burnt.  This will take about 10-15 minutes.

The kale will be light, crispy and will fall apart in your mouth.  The lemon salt adds enough to make it taste like a snack and not a green vegetable.  Hope that you and your family enjoy it as much as mine does!
