I am a fan of the low carb options here in Amarillo. Especially during my recent weight loss challenge at work.

I love anything cauliflower! Cauliflower pizza crust? Yes! As a rice substitute! Bring it on. So when I saw that Chop Chop in Wolflin was entering this next phase of coolness. Well I was so excited.

They announced last weekend that for a limited time they would start serving cauliflower rice as an option with their meals. I couldn't wait to try it. I made plans with my daughter to grab dinner on Wednesday and try it out.

I also convinced a friend of mine from work to give it a try too. She is in the weight loss challenge too so it was a win-win. She called me from the restaurant to warn me she thought they were out of the cauliflower rice.

This was both good and bad news. Obviously bad because I was really looking forward to trying it. I would have to wait another day. The good news? Well obviously they ran out. So to me that is a huge success. People wanted the cauliflower rice. That is a great thing. I'm hoping the David's decide to keep it on the menu and even expand it to their other location.

Faith and I still ate at Chop Chop on Wednesday. I called to confirm that they were in fact, out. They were. So I got the Chicken and shrimp with no rice. It was still very good. I even got a phone call from their manager. to let me know when they had more rice cauliflower in stock.

I went back on Saturday and got beef cauliflower rice and chicken and shrimp cauliflower rice. They were both very good. I am just excited to have a Chop Chop so close to my house. Oh and another low carb option. I will be back. Great service, great food.

If you haven't tried it.....you need to. You can't even tell it is not really rice. It is the beauty of the cauliflower rice!
